About the Brewery
Gochoda Sake Brewery was founded in 1922 in Shiota, Ureshino, Saga Prefecture. Guided by the belief that “people, rice, and brewing come together to create great sake,” the brewery is involved in the entire process from rice cultivation to brewing. In 1988, it began cultivating Yamada Nishiki itself at a time when this prized sake rice was difficult to obtain in Saga. Through years of experimentation alongside local growers, it has developed a reliable supply of high-quality sake rice. Its flagship brand, Azumaichi, was named with the aspiration to create “the finest sake in the East.” Building on techniques developed through ginjo brewing and slow, low-temperature fermentation, Gochoda combines traditional hands-on craftsmanship with modern equipment to produce high-quality sake that brings out the distinctive qualities of the rice.
