About the Brewery
Akishika Shuzo was founded in 1886 in Nose, Osaka. The brewery began growing its own rice at an early stage and started cultivating Yamadanishiki sake rice in 1985. Today, its sake production is built on rice from both its own fields and contract farmers. A defining feature of the brewery is its commitment to “integrated farming and brewing,” treating rice cultivation and sake making as one continuous process. Since 2003, Akishika has produced only junmai sake, using rice grown without pesticides or chemical fertilizers and nourished with organic compost. The brewery aims to draw out the full umami of the rice while shaping a powerful sake style tightened by sharp acidity.
