Fuji Shuzo

Fuji Shuzo is a small sake brewery located in the heart of the Izumo Plain, founded in 1939 with the philosophy of “Brewing Izumo, aspiring to Mt. Fuji.” Committed to handcrafted production, the brewery works closely with local rice farmers and practices sustainable cultivation using Izumo-grown sake rice. Traditional methods such as wooden press extraction are still preserved, allowing each step to be guided by the brewers’ refined senses. The result is a harmonious, honest sake with depth and clarity of character. Reflecting the spirit and mythology of Izumo, Izumo Fuji embodies a timeless pursuit of authenticity, remaining true to its roots while continuously striving for excellence.
