Yamachu Honke Shuzo, founded in the mid-Edo period and now led by 11th-generation head Masahiro Yamada, is a distinguished brewery in Aisai, Aichi Prefecture known for its flagship brand, Gikyo. The brewery’s unwavering mission is to express the full potential of top-grade rice in its sake, with a particular focus on Yamada Nishiki grown in the Tojo region. Deeply committed to its growers, the team works side by side with farmers, even taking part in demanding tasks such as weeding to support sustainable cultivation.
