About the Brewery

Imada Shuzo, located in Akitsu, Hiroshima Prefecture, carries on the legacy of Mr. Senzaburo Miura, who in 1898 pioneered the soft-water brewing method that gave birth to modern ginjo sake. The brewery’s flagship label, Fuku-cho, was also named by Mr. Miura. Blessed with the gentle climate and pure waters of the Seto Inland Sea, Imada Shuzo pursues the delicate, refined flavors characteristic of soft-water brewing while preserving the craftsmanship of the Hiroshima Toji. The brewery has also revived the heirloom sake rice Hattanso, once lost for over a century, known for its rustic warmth and soft yet crisp finish. Guided by Miura’s motto, Hyakushi Senkai (“a hundred trials, a thousand refinements”), Imada Shuzo continues to uphold tradition while sharing the spirit of ginjo sake from Akitsu with the world.
