About the Brewery
Kikumasamune Sake Brewery was founded in 1659 by the Kano family, who built a sake brewery on the grounds of their main residence and began the sake brewing industry. At that time, the Nada region had not yet developed as a famous brewing area, but by the end of the 18th century, it had become popular as a ``kudari sake'' in Edo, and the Kano family's sake was especially loved by Edo people. During the Meiji period, the 8th generation Mr. Jiroemon Kano (Akikao) focused on improving quality, and the brand ``Kiku Masamune'' was established. The traditional method of brewing sake, ``kimoto-zukuri,'' which maintains its dryness, has been passed down to this day.
