About the Brewery
Tsuji Honten was founded in 1804 and is located in Katsuyama, Maniwa, Okayama Prefecture. Once an official supplier of sake to the Katsuyama domain of Mimasaka, the brewery’s history gave rise to its Gozenshu brand name. With a commitment to “local rice, local water, and local craftsmanship,” all of its sake has been brewed exclusively with Okayama-grown Omachi rice since the 2022 brewing season. Using underground water from the Asahi River, Toji Maiko Tsuji and her team carry on the traditions of the Bicchu Toji while pursuing sake with rich rice umami, a clean finish, and a character that naturally invites another glass. The brewery also practices its own evolved form of the ancient Bodaimoto starter method, connecting the terroir and brewing traditions of Mimasaka with contemporary sake making.
