About the Brewery
Sankan Sake Brewery was founded in 1806 and is located in Kojima, Kurashiki, Okayama Prefecture. Situated near Shimotsui Port, a historic fishing port, the brewery has long focused on producing sake that pairs naturally with locally landed seafood. It uses Omachi and Asahi, two rice varieties originating in Okayama, together with local hard water filtered through granite. While carrying on the traditional techniques of the Bicchu Toji, Sankan draws out the full umami of the rice and pursues a crisp, dry style that enhances the flavors of fish while standing up to its richness and oils. From rice and water to the finished flavor, the brewery remains deeply committed to its local terroir, creating distinctly Okayama sake designed to complement food and remain enjoyable throughout a meal.
