Sake
About the Brewery
Shinkame Sake Brewery was founded in 1848 and is located in Hasuda, Saitama Prefecture. In 1987, it became the first brewery in postwar Japan to convert entirely to Junmai sake production. Guided by the philosophy that “sake begins with rice,” Shinkame places the quality of its rice above all else and actively incorporates organically grown sake rice. Brewing with underground water from the Arakawa River system originating in the Chichibu mountains, it produces structured, dry Junmai sake. The brewery also places great importance on maturation, offering sake such as Hikomago, which is aged for at least three years to develop the rich umami of rice. When warmed, its sake gains even greater savoriness and a softer texture, reflecting Shinkame’s pursuit of Junmai sake that pairs naturally with food and remains enjoyable glass after glass.
