Urasato Sake Brewery is located in Yoshinuma, Tsukuba, Ibaraki Prefecture, where it draws on the natural environment overlooking Mount Tsukuba and traditional brewing craftsmanship. Carefully selected sake rice is used throughout a meticulous process, from washing and soaking to koji making, fermentation, and pressing, with the toji and brewers making precise judgments at every stage. Sixth-generation owner Chikara Urasato turned his attention to Ogawa Yeast, a ginjo yeast originating in Ibaraki, and launched the new Urasato brand under the philosophy of “mastering Ogawa Yeast.” While this yeast produces delicate aromas through low-temperature fermentation, it is also challenging to handle. By drawing out its distinctive character, Urasato pursues sake that expresses both the terroir of Ibaraki and his own roots.
