Aizu Shuzo

Aizu Shuzo, founded in 1688, is a historic brewery located in Minamiaizu, Fukushima. Brewing still takes place in kura that date back to the Edo period, using exceptionally soft water drawn from 40 meters underground—among the softest in Japan—which gives the sake its gentle, rounded, and refined character. Committed to local sake rice and water from Minamiaizu, the brewery values sake that reflects the region’s climate and culture while combining over 330 years of tradition with modern brewing techniques. Through its flagship brands “Aizu” and “Yamanoi,” Aizu Shuzo continues to pursue elegant, approachable sake deeply rooted in its local identity.
