About the Brewery
"Zuiyo is a historic brewery representing the birthplace of Kumamoto’s sake culture. Founded in 1867, it has continuously pursued a style of sake that reflects Kumamoto’s character — robust yet refined, graceful yet full-bodied. The name “Zuiyo” originates from an auspicious legend in which a hawk flew into the brewery on New Year’s Day, symbolizing prosperity and good fortune.
Zuiyo has played a pivotal role in the development of Kumamoto sake, contributing to the establishment of the Kumamoto Yeast, now known nationwide as Kyokai No.9, renowned for its elegant aroma and balanced structure. Alongside its sake production, Zuiyo also crafts shochu, expressing the region’s rich terroir and traditions. Through respect for local rice, pristine underground water from Mt. Aso, and time-honored techniques, Zuiyo continues to evolve while preserving the essence of Kumamoto craftsmanship."
