About the Brewery
Fujii Brewery & Distillery is a small, family-run shochu producer located in Chitose Town, Bungoono City, Oita Prefecture, founded in 1929. With the president also serving as master distiller, the brewery has remained committed to fully handmade production methods, preserving traditional techniques passed down through generations. Using wooden trays for koji-making, wooden vats for steaming barley, and a custom-built still for distillation, the brewers rely on their five senses to carefully draw out the true character of the ingredients. In recent years, the brewery has also expanded into craft beer production, pursuing the same philosophy of creating smooth, refreshing, and endlessly enjoyable drinks. Rooted in its local community, Fujii continues to craft distinctive flavors that reflect the land and its heritage.
