About the Brewery
The brewery stands on the Saku Plain at an elevation of 700 meters. The Asama mountain range lies to the north and the Yatsugatake range to the south, with Japan’s longest river—the Chikuma River (called the Shinano River in Niigata)—flowing steadily in between. Surrounded by grand nature, we brew in the severe cold of winter (early mornings often drop to around −10°C). Low temperatures are welcome for brewing Daiginjo and other sake; the cold is necessary to cool steamed rice to mashing temperature and to suppress unwanted bacteria. Truly, the nature of Shinshu Saku is itself our brewery.
