About the Brewery
Soleil (Asahi-Yoshu), based in Yamanashi City, was revived in 2002 by a young couple with a vision for authentic Japanese wine. Producing around 25,000 bottles annually, the winery works with grapes from its own vineyards and local growers. By adopting sustainable practices such as grass cultivation and modified short-pruning trellises, Soleil emphasizes harmony with nature. In winemaking, the focus is on craftsmanship over machinery, carefully guiding fermentation and aging to preserve the grapes’ true character. At its core, Soleil’s philosophy revolves around asking “What makes a good wine?” and “What does it mean to be authentic?”—questions that shape wines expressing both individuality and a deep connection to the land.
