Jozan Sake Brewery, located in Fukui City, traces its roots back to the late Edo period and is now led by the ninth-generation president, Mr. Shimpei Tokoyama. Using pristine spring water from the Hakusan mountain system and rice grown in the Miyama district, the brewery is known for crafting sake in the “Echizen Karakuchi” style—clean, crisp, and dry, yet rich in umami. Its flagship label Jozan reflects this philosophy, offering sake that harmonizes with local cuisine while embodying both elegance and depth. Guided by the credo “Brewing Harmony,” Jozan Shuzo carries forward its long tradition while embracing innovation to share the distinctive sake of Fukui with the world.
