Matsuse Shuzo, located in Ryuo Town, Shiga Prefecture, is renowned for its flagship label Matsuno Tsukasa. Drawing on pristine water from 120 meters below the Suzuka mountain range and exclusively using contract-grown sake rice, the brewery emphasizes quality and sustainability. Since the 1990s, it has pursued environmentally conscious cultivation, including pesticide- and chemical-free farming, to preserve the rich terroir for future generations. Employing methods such as hako-koji (box koji making), in-house yeast strains, and both sokujo and traditional kimoto starters, it crafts sake in small batches that balance simplicity with depth. Recognized with numerous awards including the IWC Trophy and multiple gold medals at the National New Sake Appraisal, Matsuse Shuzo remains committed to brewing sake that embodies harmony with nature and offers drinkers a sense of serenity.
