About the Brewery

Hayakawa Shuzo, located in Komono Town, Mie Prefecture, was founded in 1915 and moved to its current site after the Isewan Typhoon. Today, the brewery is led by the fourth-generation toji-owner, Mr. Toshihito Hayakawa. Its flagship label Tagonoura is brewed exclusively as junmai sake, with all pressing done using the traditional fune-shibori method, resulting in a soft and gentle character. The brewery’s water comes from the Shakagatake spring of the Suzuka Mountains, filtered through granite to create high-quality soft water that imparts a mellow taste. Rice varieties are carefully selected according to their ideal terroir, including Mie’s original “Kami no Ho,” cultivated under contract with local farmers. Combining rich natural resources with steadfast craftsmanship, Hayakawa Shuzo continues to brew sake that is both high in quality and perfectly suited to accompany meals.
