About the Brewery
Located in Miike District, Fukuoka Prefecture, Mii no Kotobuki was founded in 1922 by Mr. Shigejiro Inoue and is known as a distinguished ginjo brewery. Surrounded by the fertile nature of the Chikugo Plain, the brewery has remained committed to quality since its foundation, with the majority of its production being junmai sake. True to the saying “Ichikoji, Nimoto, Sanzukuri” (“First koji, second moto, third brewing”), the toji personally handles koji making, combining scientific research, craftsmanship, and passion in the brewing process. Using locally grown Yamada Nishiki from Fukuoka, the brewery values locality, quality, and originality, achieving a remarkable 95% award rate at the Annual Japan Sake Awards—the only brewery in Kyushu to do so. With a spirit of innovation, Mii no Kotobuki has pioneered early adoption of junmai brewing, refrigerated storage, and creative label designs, and in 2022 proudly celebrated its 100th anniversary.
