About the Brewery

Shibata Shuzo, located in the mountain village of Kanzui in Okazaki City, Aichi Prefecture, was founded in 1830 by Mr. Hikozaemon Shibata. Situated at an elevation of 350 meters, the brewery benefits from pristine air, abundant mountain water, and an ideal climate for sake brewing. At its heart is the legendary ultra-soft water known as Kanzui (hardness 0.2), used throughout every step of production—from washing the rice to fermentation and storage. This pure water, together with Japan’s distinctive four seasons, nurtures sake of delicate depth and refinement. Although the original Edo-period brewery was destroyed by fire in the Meiji era, it was rebuilt and still stands today alongside the modern “Gin Jozo” facility, symbolizing the brewery’s balance of tradition and innovation. Its flagship label Takano-tsukasa and other brews embody over eight generations of passion and craftsmanship.
