Shochu

About the Brewery

Arimura Sake Brewery was founded in 1947 as the Arimura Taiji Sake Brewery Factory, and obtained a brewing license in 1957, making it the only Amami brown sugar shochu brewery on Yoron Island. Yoron Island is an island with a raised coral reef located at the southernmost tip of the Amami archipelago, and is characterized by a beautiful landscape surrounded by reefs and the view of the main island of Okinawa from the south coast. With the catchphrase "A gift from the southern islands. From Yoron Island." in April 2014, the representative brand "Ariizumi" was renamed "Shima Arisen."

For koji making, we have used triangular racks since our founding, but in 2009 we introduced a fully automatic koji making machine to achieve more stable koji making. It is also characterized by the process of preparing sake in jars, and the jars lined up in the storehouse testify to this tradition. At the root of shochu making is gratitude to the gods and ancestors, as well as a "heart of sincerity." The shochu produced by the brewery, which values the spirit of "coexistence and mutual prosperity" and continues to work together with the islanders, symbolizes the island's culture and the bonds between its people.
