About the Brewery
Hinatayama Brewery was established in 1919 by volunteers from the neighborhood. Mr. Naoji Hamasaki, who had resigned from his teaching position, taught himself how to make shochu and immersed himself in research while also working to train master brewers. As a result, we created ``Asahi'', a shochu with a unique taste. Based on our belief that ``we will not turn off the lights of the sake brewery from the city.Sake brewing is the building of the city,'' we aim to revitalize the local economy and expand the Japanese sake market, and contribute to the region through sake brewing. The brewers have come together as one to continue to take on challenges while preserving tradition, and will continue to carefully brew sake that will meet the expectations of our fans.
