About the Brewery
Nakamura Sake Brewery, founded in 1898, has continued to pursue new possibilities for authentic shochu while preserving traditional manufacturing methods for over 130 years. All brands are brewed using handmade jars and atmospheric distillation. Potato shochu is a distilled alcoholic beverage made by growing rice malt and fermenting it with yeast to bring out the deliciousness of sweet potatoes to the fullest. During the manufacturing process, we consider microorganisms such as Aspergillus oryzae to be "living things," and we place great importance on carefully nurturing them over time. We continue to preserve traditional handicrafts in order to create a gentle flavor unique to the brewery that cannot be obtained through mass production that emphasizes efficiency. With an unchanging attitude, we will continue to work on making shochu that we are completely satisfied with.
