About the Brewery


Shiratsuyu Sake Brewery is a historic sake brewery that was founded in 1730 (Kyoho 15). In 1960, it became Shiratsuyu Sake Brewery Co., Ltd., and in 1989, the factory was moved to Yamakawa, Ibusuki City, located at the southernmost tip of the Satsuma Peninsula. Yamakawa is the place where sweet potatoes were introduced to Japan in the early 17th century, and is an area that has been selected as one of the ``100 Water Villages'' boasting soft water that gushes out from the foot of Mt. Kaimondake.

At Shiratsuyu Sake Brewery, the main ingredient is high-quality Kogane Senkan from Kagoshima Prefecture, mainly in the Yamakawa area, and natural water is used for brewing water and split water. While adhering to traditional manufacturing methods, we allow a maturing period of approximately one year. During this time, the excess oil produced by the temperature difference with the outside air is carefully removed by hand, achieving a deep flavor and mellow taste that cannot be achieved with low-temperature filtration. We are working on making shochu, valuing the blessings of nature and tradition.
