About the Brewery

Inishenosato Winery is a winery established in 2017 in the Kitaono district of Shiojiri City, Nagano Prefecture. Located at the highest point in Shiojiri City at an altitude of 850m, we are cultivating grapes that take advantage of the temperature differences. This region was previously considered barren for fruit trees, but thanks to the effects of global warming and advances in heat retention measures, grape cultivation has become possible.

Currently, we focus on European varieties such as Pinot Noir, Merlot, Cabernet Franc, and Chardonnay, as well as German varieties such as Kellner, Riesling, and Gewurztraminer. We also procure grapes from contracted farmers in the nearby Kikyogahara and Asima areas, and produce approximately 5,000 to 6,000 bottles of wine annually. We pursue the production of sharp, structured and elegant wines that take advantage of the characteristics of the Kitaono region.

Taking advantage of the high quality brought about by the high altitude and temperature differences, we are taking on the challenge of grape cultivation and winemaking rooted in the region.
