About the Brewery
Founded in 1892 (Meiji 25), Ota Sake Brewery is located in the center of the Iga Basin, an area surrounded by rich countryside, and continues to produce sake in small quantities by hand during the coldest months.
The brand ``Hanzo'', named after the local area ``Iga Ueno'', is brewed with brewed rice produced in Mie Prefecture and contract-grown Iga rice, and brewed with well water within the brewery. We brew sake with a wide range of flavors while using traditional wooden barrel brewing methods, and have won numerous awards in recent years for our improved quality.
The ideal environment for rice cultivation, including the rich soil of the Old Biwa Lake layer, soft underground water, and temperature differences between day and night, fosters high-quality sake rice unique to the region, such as ``Yamada Nishiki'' and Mie Prefecture's unique ``Yamada Nishiki''. "Kami no Ear" is also used. We use sake rice purchased from experienced full-time farmers to create ``Hanzo,'' a product of the Iga climate.
