About the Brewery
Yukitsubaki Sake Brewery was founded in Kamo City, Niigata Prefecture in 1806 (Bunka 3rd year) and began producing sake. Kamo City is known as ``Little Kyoto of Hokuetsu,'' and is a beautiful city dotted with historical sites such as the Kamo River, Kamoyama Park, and Aomi Shrine. Kamoyama Park, which is adjacent to the brewery, is home to snow camellias that bloom as the snow melts, and the brand name ``Koshino Yukitsubaki'' was named after these flowers.
Since 2011, as a ``Junmaigura'' specializing in Junmai Sake and Junmai Ginjo Sake, we have been brewing sake by incorporating the latest technology while maintaining handcrafted methods. We value "enjoyment" in sake brewing, and pursue quality by responding to different conditions every year.
We also try to brew sake using ``Yukitsubaki Yeast'' collected from snow camellias in Kamoyama Park, creating a unique sake with a citrus aroma and refreshing acidity. This uniqueness has earned us high praise, and we are also working on brewing sake using brewed yeast.
