About the Brewery
Hiyama Sake Brewery is a winery that has been producing wine with roots in the region for over 45 years in Hitachiota City, Ibaraki Prefecture. We started making wine using Kyoho grapes that can be eaten raw, and in 1976 we cleared the slopes of the mountain and started growing wine grapes. In particular, we have repeatedly cultivated wild grape hybrids and selected varieties that are suitable for the climate of this area.
In 1981, they obtained a production license as ``Hitachi Wine'' and cultivated and brewed unique grapes such as ``Pegal'', ``Kokoji'', ``Wine Grand'', and ``Yama Sauvignon''. Currently, we produce 7 types of Hitachi wine using 5 types of wild grape hybrids and local Kyoho grapes.
At Hiyama Sake Brewery, we use grass cultivation without the use of herbicides and low-pesticide cultivation, and practice winemaking in harmony with nature. We offer wines that take advantage of the natural characteristics of the grapes and reflect the climate of the land.
