About the Brewery
Tada Winery began cultivating Pinot Noir in 2007 and has since expanded to include a variety of grape varieties such as Merlot and Chardonnay. The vineyard operates without chemical fertilizers or herbicides, relying on manual weeding and the careful use of pesticides. In 2021, they began trialing pesticide-free cultivation for Pinot Noir, with plans for further expansion.
In 2016, the winery established its own production facility, focusing on natural wine-making techniques, including wild yeast fermentation, minimal use of sulfur dioxide, and unfiltered production methods. The winery operates in a renovated 50-year-old former onion storage facility, utilizing the natural environment for temperature control. Currently, Tada Winery produces a diverse selection of wines, with around a dozen varieties crafted in small batches. They are also planning to expand their range of grape varieties in the future.
