About the Brewery
Hiraizumi Honpo is the oldest sake brewery in Tohoku and the third oldest in Japan, founded in 1487 at the foot of Mt. Chokai in Nikaho City, Akita Prefecture. The brewery is located in the center of the town, which flourished as the castle town of the Nika Yasu clan, and is currently being taken over by the 26th generation. The brand ``Hiraizumi'' was named after a phrase left behind by a friend of the famous monk Ryokan, which means ``excellent white water,'' and is characterized by the traditional ``yamahai preparation.'' This method utilizes the power of natural lactic acid bacteria and carefully cultivates sake mash through the action of microorganisms. Sake brewing, which spares no effort and time, produces a deep flavor based on the laws of nature.
