About the Brewery

Hananoka Sake Brewery, founded in 1902 (Meiji 35), is a sake brewery located in Izumi-cho, Tamana-gun, Kumamoto Prefecture. This brewery, located in a rural area surrounded by mountains with abundant nature and a river running through it, began producing sake using the clean rocky water that gushes out from the shrine's well and the rice harvested from the shrine's rice fields. Since then, we have continued to brew sake while being close to the local community. The name ``Hana no Kaori'' comes from the scent of plum blossoms that wafted into the brewery when the brewery was founded. In 1992, the company name was changed to Hananoka Sake Brewery Co., Ltd., and now the sixth generation owner, Kiyotaka Kanda, continues the tradition. The sake brewing philosophy is based on ``Ubusuna,'' and they use rice grown in the Kikuchi River basin of Wasui Town as ``Ubusuna.'' Based on natural farming methods, we place environmental conservation and coexistence with local culture at the core of our sake brewing.
