About the Brewery
Kamenoi Sake Brewery is a sake brewery located at the foot of the Kokonoe Mountains in Oita Prefecture.It was founded in the Kyoho era (Edo period) and boasts a history of about 300 years. Originally engaged in mountain forestry and producing sake for mountain workers, the company gradually began to provide alcohol to local residents and began a full-scale sake brewing business.
The area where the brewery is located is called ``Tenryo,'' and the brewery continues to make traditional hand-made sake by taking advantage of its abundant underground water and bitterly cold climate. At Kamenoi Sake Brewery, we use Gohyakumangoku rice cultivated under contract with local farmers in the Kusu area, and more than 40% of our production is brewed with this contracted sake rice. This sake rice is suitable for Junmai Sake and Junmai Ginjo Sake, which have less unpleasant taste and fuller flavor, and we aim to create a safe raw material with less pesticides.
The company's distinctive brewing method, ``Yamahai Shikomi'', follows the traditional manufacturing method and produces rich sake with a distinctive flavor and acidity. In addition, Daiginjo has received high praise, including being used in the restaurant on JR Kyushu's luxury train "Seven Stars." Kamenoi Sake Brewery continues to provide sake that is loved by many people with its commitment to sake brewing and quality that is rooted in the region.
