About the Brewery
Seto Sake Brewery is a long-established sake brewery located in Kaisei Town, Kanagawa Prefecture, founded in 1865. In 1980, they took a break from home brewing, but in 2018 they restarted it, inspired by the beautiful countryside. The driving force behind the restart was the desire to bring happiness and fun to people with sake born from the scenery of Kaisei Town, such as the seasonal nature and old thatched houses. For sake brewing, we are particular about small-scale brewing, the use of deep underground water from the Tanzawa Mountains, steamed rice in Japanese pots, and careful koji production using the box koji method, with the aim of disseminating a rich food culture rooted in the local climate and natural features. .
