About the Brewery
Hamakawa Shoten is a sake brewery that uses clear water and carefully selected sake rice to produce the brand name ``Bijou.'' The water used for preparation is underground water from the Nahari River, which originates from Jinjimori in the Yanase area, which is the hometown of Yanase Cedar in Kochi Prefecture. It is one of the most ultra-soft waters in Japan, and the sake produced from this water is characterized by its soft texture and clean taste. However, brewing sake with ultra-soft water is extremely difficult, and brewers carefully prepare sake while taking advantage of its characteristics.
In addition, by using rice that has its own characteristics depending on the region, such as the highest quality Yamada Nishiki from the Special A area of Hyogo Prefecture, ``Gin no Yume'' from Kochi Prefecture, and ``Matsuyama Mitsui'' from Ehime Prefecture, we have created a highly fragrant rice. We offer Japanese sake with a deep flavor. Hamakawa Shoten continues to make sake that takes advantage of the blessings of nature and is in tune with the local people.
