About the Brewery
In the 1970s, when the words "Ginjoshu" and "Ginjoshu" were not yet widely known, Doi Sake Brewery was one of the first to try to commercialize this product. Under the guidance of the previous chairman, Mr. Seiyasu Doi, and the famous brewer, Mr. Masakichi Hase, the sake rice, equipment, and manufacturing methods were reviewed, and ginjo sake was born. Its reputation is high, and Doi Sake Brewery has established the name of ``Ginjozo, Daiginjoshu''. In 2009, following the sudden passing of Toji Hase, his disciple Nozo Shinba took over as toji, and since then he has won gold awards at the National New Sake Appraisal. In 2022, marking the 150th anniversary of the company's founding, Mr. Shinba expressed his ambition to ``challenge new sake brewing while preserving tradition,'' and Doi Sake Brewery continues to brew sake that combines tradition and innovation.
