About the Brewery
Takahashi Shosaku Shuzoten is a brewery based in Aizuwakamatsu, Fukushima, where it has been making sake since the early Meiji period. Despite enduring war, land reform, and other upheavals, the brewery shifted toward junmai-focused brewing and has remained committed to expressing the terroir of Aizu. Using sake rice grown in local paddies, including its own fields, it practices sake making under the philosophy of “dosandoho”—crafting sake through the land, water, and people of its home region. Through its flagship brand “Aizu Musume,” the brewery values warmth, depth, and a quiet affinity with everyday meals rather than flamboyance, continuing to create sake that reflects the very harvest of Aizu.
