About the Brewery
Zuisen Shuzo Co., Ltd. was founded on May 1, 1887 (Meiji 20).
Long ago, to maintain high quality, the Ryukyu royal government permitted awamori brewing only in the three Shuri castle towns known as Shuri Sanka—Sakiyama, Akata, and Torihori—keeping it under strict control and preserving the traditional taste.
The renowned Ryukyu Awamori Zuisen of Shuri was named by our founder, Mr. Yukiei Kyan.
There was once a spring partway up the stone steps leading to the second gate within Shuri Castle. Its official name is ‘Zuisen,’ but because the water flows from a spout shaped like a dragon’s head, it is commonly called ‘Ryuhii’ (Dragon Spout).
The water flowing from this spring is pure and clear, and several inscriptions praising the spring were said to have stood nearby.
Aiming to brew sake as pristine and rich as this clear spring, and wishing for the further development and long inheritance of traditional awamori-making, the brand was named ‘Zuisen’ after this spring.
