About the Brewery
Founded in 1904, Kai Shoten is now run by its fourth generation in the basin of Isa, Kagoshima, where sharp temperature contrasts and high-quality rice create ideal conditions for shochu making. The brewery produces only one brand, Isami, crafted exclusively with black koji since its inception. While most producers once used white koji, Kai Shoten has remained faithful to black koji, resulting in a mellow yet rich flavor, best enjoyed with hot water.
