About the Brewery
Sarukoizu Sake Brewery is a historic shochu brewery founded on Iki Island in 1903 (Meiji 36). It is known as a sake brewer that continues to innovate while preserving the tradition of "Iki Shochu". We respect the golden rule of using ``rice malt'' and ``barley,'' which are the characteristics of Iki shochu, and produce authentic shochu that harmonizes the sweetness of rice with the flavor of barley. In particular, we use our uniquely improved Sarukawa-style distiller to bring out the flavor of the ingredients to the fullest, creating a classy shochu.
In recent years, we have developed shochu that uses the industry's first "ultrasonic aging technology" to homogenize the alcohol molecules, reducing the burden on the liver and suppressing nausea and hangovers. This opens up new possibilities for shochu that fuses tradition and science.
Sarukoizu Sake Brewery produces shochu with local roots in Iki's rich natural environment, using locally grown barley and clean groundwater. The shochu embodies Iki's rich culture and history and is supported by many drinkers.
