Shochu

About the Brewery

Joraku Sake Brewery is a brewery founded in 1912, and uses natural water from the fertile land nurtured by the Kuma River and carefully selected domestic ingredients, mainly from Kyushu and Kumamoto Prefecture, to brew Kuma. We manufacture shochu, authentic potato shochu, authentic barley shochu, and liqueurs. We avoid mass production and adopt traditional manufacturing methods that spare no effort. Led by an experienced brewer, we are focusing on developing good old shochu and new products while passing on the tradition to young brewers. We are extremely particular about making shochu, pursuing the production of high-quality products, including koji making, distillation, filtration, and even burying aging tanks underground to suppress temperature fluctuations. As a result, we have been able to provide exquisite taste, winning numerous honors at competitions. We also focus on storage aging in oak barrels, and have approximately 800 barrels. Carefully selected unblended sake is aged for a long period of time, and a skilled blender delicately blends it from multiple barrels to achieve a harmonious aroma and taste. We continue to carefully produce shochu by combining tradition and technology.
