About the Brewery

Yamatoichi Sake Brewery was established in 1952 when the previous generation took over the brewery that had been in operation since the Meiji era. While inheriting the original shochu-making methods of our predecessors, we unravel the history of Kuma shochu and strive to recreate its original taste and manufacturing method. While preserving tradition, we continue to take on new challenges, such as carefully making koji in a stone-built koji room, preparing rice bowls using brown rice, and distilling in a helmet pot.

The representative brand ``Onsen Shochu Yume'' uses alkaline hot spring water that gushes out in the brewery from brewing to splitting, and is characterized by a mellow and healthy taste. ``Milk Shochu Farm Dream'' is made by fermenting locally produced fresh milk and rice, and is loved by many people for its apple-like aroma and sweet taste. In addition, ``Meiji Hatouka'' reproduces the manufacturing method based on literature from the Meiji period, and offers a taste that can be said to be the origin of Kuma shochu. ``Ougin Yamatoichi'' is a special dish made using yellow koji, which has a history of 450 years, and is made with all koji.

Yamatoichi Sake Brewery continues to convey the charm of Kuma shochu by fusing tradition and innovation.
