About the Brewery
Matsumoto Sake Brewery was founded in Asagiri Town, Kumamoto Prefecture in 1908, and is a brewery that continues to preserve the tradition of Kuma shochu. Although it is a tropical country, this region has large temperature differences, and is blessed with high-quality rice, water, and a climate suitable for making shochu. The brewery, which still has the original building from when it was founded, values traditional manufacturing methods, such as making koji by hand in a stone koji room.
On the other hand, we are also working to improve the quality of our shochu by pursuing unique aromas and flavors, such as by using home-grown yeast. Our brewers work hard every day to make shochu with the right aroma, deep flavor, but without bitterness, and with the desire to deliver sake that will be loved by generations.
The tradition and passion that has been passed down under the clear starry skies of winter lives on in the shochu of Matsumoto Sake Brewery, which continues to be loved by many people.
