About the Brewery
Miyahara Sake Brewery is located in the Hitoyoshi-Kuma area in the southern part of Kumamoto Prefecture, producing Kuma shochu in an environment blessed with the Kuma River, one of Japan's three major rapids, and the clear streams of the Kyushu Mountains. The region's abundant water and fertile soil provide ideal conditions to support the production of Kuma shochu, which is made from 100% domestic rice.
The brewery uses koji rice grown in a traditional stone chamber and underground water from the Kuma River, using a cold brewing process. We use atmospheric distillation using pot stills, and the unprocessed sake after distillation is aged for a long period of time in jars. Each bottle of shochu is painstakingly crafted with great care and effort.
The main brands, ``Junen no Tatane'' and ``Kuma Sennin,'' are supported by many drinkers for their rich aroma, smooth texture, and elegant taste. These brands are popular as symbols of the tradition and quality of Kuma shochu.
