Daisen Sake Brewery, located in the Isa region of northern Kagoshima Prefecture, produces delicious handmade sweet potato shochu. The Isa region is a misty water basin with Kawauchi River, the prefecture's largest river, flowing through the center and the Kirishima Mountain Range to the east.The inland climate with large temperature differences between day and night provides the perfect environment for making shochu. . This area is known as the birthplace of shochu, and many brewers have continued to make shochu for many years.
