About the Brewery

Higashi Sake Brewery is a shochu brewery with a history of over 100 years, founded in 1915. Based on the philosophy of the founder, Mr. Tokinai, that ``nature is best in all things,'' we continue to produce delicious sake that is kind to people. While preserving tradition, we value the attitude of challenging new possibilities and strive to improve quality in harmony with modern technology. Of particular note is the revival of ``Akumochizake,'' a traditional brewed liquor that was once valued in Kagoshima households. After the war, production of this sake ceased, but Mr. Higashi researched and improved it to recreate it. While adhering to the traditional manufacturing method, we produce completely unpasteurized sake with the enzymes active without pasteurization.
Higashi Sake Brewery, which is a shochu brewery but also focuses on contributing to food culture, continues to create new value with its unique sake brewing that combines tradition and innovation.
