About the Brewery
Heidi Winery is particular about making the most of Noto's natural environment and brewing "sea wine." Located in Monzen-cho, Wajima City, Ishikawa Prefecture, we practice soil cultivation that respects microbial farming methods, hand-pick harvesting, and cultivate grapes in a way that is close to nature. Using grapes with rich minerals and flavors from the Sea of Japan, carefully controlling the temperature, and aging in French oak barrels, the wine offers a high-quality taste that is perfect for Noto's food culture.
