About the Brewery
Domaine Hide uses grapes from the Southern Alps to brew red wine with a particular focus on Berry A. In pursuit of ``Saigne'', which removes the fruit juice, they also produce red wine with a pulp content of over 50%, comparable to Daiginjo sake. This is a winery that produces a small amount of 8,000 bottles a year. The brewer, who has experience as a diver, is aware of the moon's gravitational pull, and harvests and brews according to the moon's phase. Grapes grown in the harsh conditions of Iwasaka fields are aged in world-class barrels to create unique wines.
