About the Brewery

Katsunuma Jozo is a winery that cultivates high-quality grapes based on the belief that "good wine comes from good grapes." We limit the use of fertilizers, take care of the soil while sparing no effort, and take thorough measures to prevent disease. We pursue the sweetness and rich flavor of the grapes by incorporating hedge cultivation and short tree planting.

The cultivation area is divided into three distinct areas. ``Iwai'' is a volcanic ash soil with a sweet scent and bitterness similar to white peach, ``Yamato'' is a gravelly soil with a rich acidity and minerality, and ``Kaneyama'' is a powerful fruit. The clay and sandy loam layers that bring out the flavor are attractive.

Furthermore, we have introduced innovative technologies such as reverse osmosis membrane concentrators and freezing concentration methods to produce world-class Japanese wine. We are particular about every step of the process and aim to create wines that deliver value and excitement beyond price.
