Miyazaki Honten, located in Kusunoki-cho, Yokkaichi City, Mie Prefecture, has been in operation since 1846 in an environment suitable for sake brewing, using clean underground water gushing from the Suzuka Mountains. There used to be more than 30 sake breweries lined up in this area, but now Miyazaki Honten has taken over all of them and has a large brewery spanning 8,000 tsubos. The storage warehouses and warehouses built in the early Showa period have heavy black walls and a sweet aroma, giving the atmosphere of historic sake brewing.
Miyazaki Honten's sake ``Miya no Yuki'' is brewed using underground water from the Suzuka Mountains and carefully selected natural ingredients, but the condition of the ingredients is not constant, and the water soaking and koji management are adjusted each time. We are doing trial and error every day. In 2018, a new brewery was completed and the number of small brewing operations increased, making it possible to brew sake with even more effort and love. In addition, by quantifying the equipment, the technology and taste cultivated over many years have been inherited with even greater precision. While preserving tradition, Miyazaki Honten continues to challenge new flavors in line with the changing times.We strive to provide sake that can be enjoyed from everyday life to special occasions, while remaining true to quality.
