About the Brewery
Da Sassino is a unique restaurant based in Hirosaki City, Aomori Prefecture that fuses Italian cuisine with local Hirosaki food culture, and also produces wine. The owner and chef, Michiaki Sasamori, values the spirit of ``campanilismo'' by growing vegetables in his own fields and creating everything from raw ham to cheese to wine. This philosophy is reflected in our seasonal dishes, which utilize the highest quality local ingredients.
The winery grows mainly Nebbiolo grapes in a 1.4 hectare field at the foot of Mt. Iwaki. Using this rare variety in Japan, we work every day with a passion to make Hirosaki a world-class wine producing region. They started producing wine in 2010, and through repeated trial and error, they have received high praise. We offer a special experience where you can experience the charm of Hirosaki by enjoying it with the food.
